Funky Monk offers us something different from the Deweer family, while remaining rooted in tradition. Belgium is well versed in Trappist style, washed rind cheeses, so it’s no surprise they’ve been able to produce another winner here
While it is pungent and stronger in flavor, Funky Monk is able to remain lighthearted. Notes of sweet cream, cooked onions, and garlic help to cut through the potency in just the right way. The rind stays only slightly tacky, making it easier to work with on the counter as well.
