NOTE: | Dense and mature in texture, creamy with good melting properties. Nutty and hearty, it is reminiscent of other alpine cheeses, but is characterized by a uniquely tart finish that is reminiscent of old apple varieties – and forms a perfect balance with the lush concentration. |
The pastures of the Bregenzerwald in Vorarlberg are high up in the mountains, at 930 to 1500 meters above sea level, and they offer the Brown Swiss herds a wide variety of the best grasses and herbs. This means: good milk with a lot of character and expression all year round, because even in winter no silage is fed, but only hay. The milk is brought to the village Sibratsgfäll dairy by the farmers in the mornings and evenings, where it is processed fresh and natural every day as raw milk.
The alpine dairy is located in a wide valley basin in the Bregenzerwald, in which the traditional structures of three-stage agriculture (homestead – pastures and alps) are still in place.
